Standard fitted sheets handle beds up to roughly twelve inches, and deep pocket sheets go further. Slightly too deep still fits; too shallow never will.
Can I add a topper to a brand new mattress?
You can, but ask why first. A topper changes surface feel, so it makes sense when a mattress you otherwise like sleeps firmer than you expected. It cannot add support, and it will mask the feel you deliberately chose. If a new mattress is badly wrong for you, the honest answer is usually a different mattress rather than a layer on top of this one.
